The natural processing of this Gesha involves drying the cherries on beds for seven days, followed by mechanical drying that simulates day/night light cycles. This method ensures a low and consistent dry without the risk of rain. Once the cherries reach a moisture content of 12% and have rested, they are transported to the La Paz dry-mill for processing. After the moisture drops to 10%, the coffee is ready for export.
